Summary: This Protocol describes the minimum sanitation requirements for the materials, design, construction, along with minimum performance requirements of temperature mimicking sensors (TMS), separate, non-invasive devices consisting of a food simulant material with a temperature measuring probe attached (thermocouple, thermister). Devices covered in this Protocol are intended for use in any type of refrigerated equipment or refrigerated space including, but not limited to,
