Most providers are not aware of spoiled meat or produce until the consumer brings it to their attention. The provider generally accepts responsibility but few consumers are aware of the process such items actually go through before they end up in the "returned goods" pile. Prior to arriving at the store or market, meat and produce has to be processed. Processing plants are comprised of hundreds and sometimes thousands of square feet of countertops used to prepare products for purchase. Due to the higher volume and various different kinds of foods that pass over the countertops, these plants are held to an even higher standard of freshness, hygiene, cleanliness and safety than their distributors. Refrigeration plays an enormous part in maintaining the standard.
There are several factors involving correct refrigeration that make it extremely difficult to regulate: Circulating air, temperature variations (even within a single cooler), rising warmer air; falling cooler air, faulty instruments and most commonly, very different cooling needs for very similar products.
The Endotherm thermometer makes the processor's job easier by giving an accurate reading of the temperature of the products themselves, rather than the air. But more importantly, it makes the shopper's job easier by giving them more food to enjoy and less to return. The silicone gel thermometers can be placed throughout a processing plant and they will give the exact temperature reading of any item's surface area; all the employee needs to do is look. The Endotherm also clearly reads temperatures within larger refrigerated areas and produce freezers. Performing a "temp surv," a survey of various temperatures within one large refrigeration unit, reveals a fluctuation of up to five degrees Fahrenheit. Placing an Endotherm in each of these areas allows the employee to arrange the products accordingly. A large walk-in produce cooler, for instance, may show 34 degrees Fahrenheit in one area and 37 degrees in another. To a human working in the cooler, such inconsistencies might seem miniscule, but to the produce, one or two degrees can mean one or two days of additional freshness. Every item has its own ideal refrigeration temperature; the Endotherm provides the means of monitoring that temperature so the distributor won't throw away as much and the consumer will return to buy more produce, instead of returning more produce they buy.
